Bright, herbaceous, and beautifully effervescent, the Olive & Rosemary Sparkler is a savory-meets-refreshing cocktail that feels effortlessly elegant. A homemade rosemary–thyme simple syrup adds fragrant depth, while Mezzetta® Pitted Italian Castelvetrano Olive brine brings a smooth, savory twist that perfectly balances vodka and fresh lemon juice.
Topped with bubbly prosecco and garnished with a Mezzetta Castelvetrano olive on a rosemary sprig, this sparkling cocktail is equal parts aromatic, unexpected, and sophisticated. Ideal for holiday entertaining or any moment that calls for something a little elevated—and a lot delicious.
- 1/2 cup sugar
- 1/2 cup water
- 3 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 1 ounce vodka
- 1 ounce Pitted Italian Castelvetrano Olives brine
- 1/2 ounce freshly squeezed lemon juice
- 1 ounce rosemary syrup
- 3 ounces prosecco
- Rosemary sprig to garnish
- Pitted Italian Castelvetrano Olives to garnish
Instructions
- Add the sugar and water to a small sauce pot along with the rosemary and thyme and bring to a boil. Stir constantly until the sugar is dissolved and set aside to cool. The longer you leave the herbs in the syrup, the more intense the flavor will be.
- To a cocktail shaker, add the vodka, Mezzetta® Pitted Italian Castelvetrano Olive brine, lemon juice and rosemary simple syrup. Fill the shaker with ice and shake for at least 30 seconds.
- Pour the mixture into a champagne flute or coupe glass and add the prosecco. Garnish with a Mezzetta® Pitted Italian Castelvetrano Olive skewered with a rosemary sprig before serving.
