These homemade Parmesan Crisps are savory, crispy bites elevated with the buttery richness of Mezzetta Castelvetrano Olives. Perfect as a snack, salad topper, or cocktail-hour nibble, they come together in minutes with just a few ingredients. 

Ingredients

Makes 12 servings 1x 2x 4x
  • 1 cup Parmesan cheese freshly grated
  • 1/4 cup Pitted Italian Castelvetrano Olives roughly chopped
  • Freshly ground black pepper optional
  • Crushed red pepper flakes optional to taste

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper. 
  2. In a small bowl, toss the grated Parmesan with the chopped Castelvetrano olives
  3. Spoon heaping tablespoons of the mixture onto the baking sheet, spacing them about 2 inches apart. Gently flatten into small rounds to about 2½ inches wide. 
  4. Transfer to the oven to bake for 5–7 minutes, or until the edges are golden and lacy. Keep a close eye as they tend to cook fast! 
  5. Cool completely on the baking sheet to let them crisp up. Optionally, sprinkle with black pepper and red pepper flakes while still warm. 
  6. Serve as a snack, salad topper, or alongside a charcuterie board.
