This week at Mezzetta: our signature glass jars are being filled with dark red, roasted peppers, straight from the farm to our flame roasters. These sweet, tender peppers pack tons of flavor and are perfect for pasta dishes, pizzas, and paninis, and can be easily added to sandwiches, salads, and frittatas.

Freshness is always our priority at Mezzetta, and because our peppers go from farm to jar in just a matter of hours, our production facility is currently bustling with activity. We are roasting around the clock!  Here’s a quick rundown of our unique process to create these delicious roasted red peppers:

 

It starts with fresh bell peppers

Mezzetta peppers are all grown in California, within just hours of our production facility. And these aren’t just standard bell peppers—we’ve worked with our grower families to source a special deep red pepper for this process that’s hearty, meaty, and has that perfect sweetness that is showcased through our unique flame-roasting process.

Getting fired up

Once the bell peppers are hand-picked and hand-selected for us, they are delivered to our production facility in American Canyon, located in Napa County, California, the same day. Our state-of-the-art fire roasters quickly char the skin on the outside of the bell peppers, which are then put through two cycles of rinsing to remove the charred skin. They are inspected, and the stems and cores are removed by hand. Next, the peppers are sliced and immediately bottled and sealed with our famous red Mezzetta cap to seal in the fresh roasted flavor. The jars are quickly pasteurized, and our labels are added. The whole process, from the time the peppers are delivered to the finished product in the jar, takes only around 45 minutes. Our goal is to serve these peppers to you, your family, and friends as quickly as possible so that you get a farm-fresh flavor.

Packed with flavor

Not only do our roasted red peppers extend the season for our California-grown peppers, but the roasting process brings a depth of flavor to many recipes that can’t be achieved with fresh bell peppers. They can be easily added to hummus or soups for a delicious, roasted flavor, mixed into deli salads and sandwiches, or added to charcuterie platters. Additionally, sweet and zesty pepper relishes make excellent toppings for hotdogs and sausages.
