This salad isn’t just crunchy, its crunchy crunchy! Bright, vibrant with amazing textures and the flavors of the Mediterranean. Add grilled chicken, salmon or shrimp for the perfect light lunch or dinner!
- 1/2 a head of green cabbage chopped
- 1 English cucumber seeded and diced
- 1 cup shelled, roasted pistachios roughly chopped
- 1/2 cup crumbled feta cheese
- 1/2 cup Pitted Greek Kalamata Olives chopped
- 1/2 cup Sliced Castelvetrano Olives
- 1/4 cup Sun-Ripened Dried Tomatoes Sulfite Free drained and chopped
- 1 cup cherry tomatoes halved
- 1 large avocado diced
- 1/4 cup chopped fresh dill
- 1/4 cup
- 2 tablespoons white wine vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- To a large bowl, add the cabbage, cucumber, pistachios, feta, Mezzetta Pitted Greek Kalamata Olives, Mezzetta Pitted Italian Castelvetrano Olives, Mezzetta Sun Ripened Dried Tomatoes, tomatoes, avocado and dill.
- To a small bowl, add the extra virgin olive oil, white wine vinegar, Dijon and salt and pepper and whisk to combine.
- Drizzle the dressing over the salad, toss to combine and serve.
