Italian Picnic Cole Slaw

Chop onion and roast in a skillet on high heat for 5 minutes. Spread the onion out on a plate and chill until ready to use.

Thinly slice red cabbage and place in a large mixing bowl. Drain Mezzetta® Italian Mix Giardiniera and chop. Add chopped Mezzetta® Italian Mix Giardiniera to bowl.

Mix together brown mustard and light mayonnaise, then add to the cabbage mixture.

Chop fresh parsley and add it to the mixture, then add the cooled onion and mix well. Chill until ready to serve.
