Bring something extra to your breakfast sandwich with this savory combination of basil pesto, roasted red bell peppers, prosciutto, and asiago cheese. For an added punch of heat, garnish with our hot cherry peppers. Now breakfast is not only the most important meal of the day, but the most delicious.
- 4 large eggs
- 4 English muffins toasted
- 1 jar (6.25 oz) Artisan Ingredients® Basil Pesto
- 1 cup baby arugula
- 1/2 cup Roasted Red Bell Peppers drained
- 8 slices prosciutto
- 4 slices asiago cheese
- Sliced Hot Cherry Peppers to garnish
- Good with Mediterranean Roasted Red Peppers Hot Sauce
Instructions
- Cook the eggs in a non-stick frying pan to your desired doneness. We recommend either over-easy or sunny side up.
- On the bottom of the toasted English muffin, add a spoonful of Artisan Ingredients® Basil Pesto followed by a small handful of arugula (roughly ¼ cup), a few pieces of Mezzetta® Roasted Red Bell Peppers, 2 slices of prosciutto, a slice of asiago cheese and the cooked egg.
- Spread another spoonful of Artisan Ingredients® Basil Pesto on the top side of the English muffin and add a few Mezzetta® Sliced Hot Cherry Peppers, if desired. Serve immediately.
