These Grilled Chicken Piccata Skewers deliver all the bright, briny flavor of the classic dish in a fun, handheld format and complete with a zesty lemon-caper sauce. Perfect for grilling season, they’re a fresh and easy way to impress at your next cookout.

Ingredients

Makes 8 servings 1x 2x 4x
  • 4 boneless, skinless chicken breasts cut into 1-inch cubes
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 tablespoons
  • 4 cloves garlic minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup Imported Non-Pareil Capers drained
  • 1/4 cup unsalted butter
  • 2 tablespoons chopped fresh parsley
  • Metal or wooden skewers soaked in water for at least 30 minutes

Instructions

  1. Preheat your grill to medium-high heat. 
  2. Season the chicken cubes with salt and pepper. Using a shallow dish. Dredge the chicken cubes in the flour, shaking off any excess. 
  3. Thread the chicken cubes onto the metal or soaked wooden skewers, leaving a little space between each piece. 
  4. Brush the grill grates with olive oil to prevent sticking and place the skewers on the preheated grill to cook for 6-8 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. 
  5. While the chicken is grilling, heat the olive oil in a saucepan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Pour in the chicken broth and lemon juice, and bring to a simmer. Stir in the Mezzetta Imported Non Pareil Capers and let the sauce simmer for another 2-3 minutes. Turn off the heat and add the butter to the sauce, stirring until melted and well combined. Season the sauce with salt and pepper to taste. 
  6. Once the chicken skewers are cooked through, remove them from the grill and place them on a serving platter. Drizzle the piccata sauce over the grilled chicken skewers and garnish with chopped fresh parsley before serving.
