- 4 boneless, skinless chicken breasts cut into 1-inch cubes
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 2 tablespoons
- 4 cloves garlic minced
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup Imported Non-Pareil Capers drained
- 1/4 cup unsalted butter
- 2 tablespoons chopped fresh parsley
- Metal or wooden skewers soaked in water for at least 30 minutes
Instructions
- Preheat your grill to medium-high heat.
- Season the chicken cubes with salt and pepper. Using a shallow dish. Dredge the chicken cubes in the flour, shaking off any excess.
- Thread the chicken cubes onto the metal or soaked wooden skewers, leaving a little space between each piece.
- Brush the grill grates with olive oil to prevent sticking and place the skewers on the preheated grill to cook for 6-8 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- While the chicken is grilling, heat the olive oil in a saucepan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Pour in the chicken broth and lemon juice, and bring to a simmer. Stir in the Mezzetta Imported Non Pareil Capers and let the sauce simmer for another 2-3 minutes. Turn off the heat and add the butter to the sauce, stirring until melted and well combined. Season the sauce with salt and pepper to taste.
- Once the chicken skewers are cooked through, remove them from the grill and place them on a serving platter. Drizzle the piccata sauce over the grilled chicken skewers and garnish with chopped fresh parsley before serving.
- Enjoy!
