- 2 large eggs
- ½ Tbsp. Mezzetta® Italian Extra Virgin Olive Oil
- 2 corn tortillas
- 2 Tbsp. Mezzetta® Roasted Red Bell Pepper & Chipotle Sandwich Spread
- ½ c. refried beans or black beans, heated
- 10 Mezzetta® Deli-Sliced Tamed Jalapeño Peppers
- ¼ c. Mexican Blend shredded cheese
- ½ avocado, sliced
- 1 Roma tomato, diced
- Garnish:
- Mezzetta® California Hot Sauce
- Cilantro
preparation
Preheat oven broiler.
In a medium nonstick skillet, heat olive oil on medium high heat. When hot, add eggs to pan and cook to desired doneness. Remove from heat and set aside.
Meanwhile, place tortillas on a sheet pan. Spread 1 tablespoon of Roasted Red Bell Pepper & Chipotle on each tortilla; add half of the beans on each one along with the shredded cheese and jalapeño peppers. Place into oven under broiler until cheese is melted.
Remove from oven and serve with sliced avocado, diced tomatoes and fried egg. Use hot sauce and cilantro to garnish.
