For spicier olives, you’ll want to pair with milder, fruiter dry wines such as Pinot Grigio, Pinot Blanc and Sauvignon Blanc and young, fresh un-aged cheeses like goat cheese, mozzarella and ricotta. For milder and meatier olives such as ones stuffed with cheese or garlic, we recommend bolder reds such as Cabernet Sauvignon, Merlot, and Zinfandel paired with dry, aged cheese.
