- 1 (15.25 oz) can corn, drained
- 1 (15 oz) can black beans, rinsed and drained
- 4 tbsp Mezzetta® Sliced Tamed Jalapeño Peppers, diced
- 1/2 cup Mezzetta® Roasted Red Bell Peppers, chopped
- 1/2 cup green onion, sliced
- 1/3 cup Mezzetta® California Hot Sauce
- 1/3 cup extra virgin olive oil
- 1/4 cup fresh cilantro, finely chopped
- juice of 1 fresh squeezed lime
- salt and pepper to taste
- 1 ripe avocado, diced
Stir together the first 8 ingredients in a large bowl.
Cover and let marinate in the refrigerator for at least 1 hour.
Remove chilled salad and top with lime juice, salt and pepper.
Garnish with avocado.
