- 4 slices of thick-cut bread, such as sourdough or brioche
- 2 eggs, cooked over easy
- 2 tbsp Mezzetta® Regional Recipes Basil Pesto
- 1/2 cup Mezzetta® Roasted Red Bell Pepper Strips
- 2/3 cup arugula
Preheat panini press.
Prepare eggs in a non-stick skillet over low heat. When eggs are fully set, flip and cook the other side to desired doneness.
To assemble the paninis, add 1 tbsp of Mezzetta® Regional Recipes Basil Pesto on the top inside of each sandwich. Add the eggs to the bottom slice of bread.
Top the egg with arugula and a layer of Mezzetta® Roasted Red Bell Pepper Strips. Top the sandwich with the pesto bread slice and place into the panini press for about 5 minutes or until slightly crispy and golden.
