- 1 baguette cut in ½” slices
- ½ c. Mezzetta® Italian Extra Virgin Olive Oil, divided
- 8 oz. ricotta
- 1 jar Mezzetta® Roasted Red Bell Pepper & Chipotle Sandwich Spread
- 3 peaches, pitted, sliced, and grilled (can substitute any stone fruit of choice)
- Salt and Pepper to taste
- Garnish: Drizzle with honey before serving
preparation
Preheat grill on high heat.
Brush olive oil on top and bottom sides of bread slices and place on a baking sheet. Bake at 400 degrees until crostini’s are golden and crisp, about 7-10 minutes.
Brush sliced peaches with olive oil and lightly season with salt and pepper. Grill for 2-3 minutes on each side or until char marks appear and peaches soften some. Remove from grill and set aside.
Spread ricotta cheese on crostini, and then spoon Roasted Bell Pepper & Chipotle on top of cheese. Top each crostini with a piece of grilled peach and drizzle with honey if a little extra sweetness is needed.
