ingredients
- 6 slices bacon, diced
- 1 lb. chicken thighs, boneless, cut into 2 inch pieces
- 2 diced yellow onions, medium
- 2 green bell peppers, diced
- 3 stalks of celery, diced
- 1 (28 oz.) can of whole tomatoes, juice included
- 2 bay leaves, whole
- 2 tsp. crushed red pepper flakes
- 2 Tbsp. Mezzetta® Crushed Garlic
- 1 Tbsp. Mezzetta® California Hot Sauce
- 4 links of Cajun sausage
- 1-1/2 c. Mezzetta® Gourmet Pickled Okra, drained and sliced
- 1 c. chicken broth
- 1 lb. shrimp, cleaned deveined, tail removed
- 4 c. Jasmine rice, cooked

preparation
Brown bacon slightly.
Add chicken thighs and brown. Add all diced vegetables and cook over low heat until tender.
Add tomatoes, bay leaf, crushed chili flakes, Mezzetta Crushed Garlic, Mezzetta California Hot Sauce, Cajun sausage and continue to simmer on medium-low heat for 30 minutes, breaking up tomatoes as it cooks, stirring occasionally.
Five minutes before serving, add Mezzetta Pickled Okra, chicken broth and cooked shrimp and continue cooking until shrimp is warmed through.
Serve over 1/2 cup of cooked Jasmine rice.
