Preheat oven to 400 degrees and heat grill or grill pan to high.

Brush olive oil on top and bottom sides of bread slices and place on a baking sheet.  Bake at 400 degrees until crostini’s are golden and crisp, about 7-10 minutes. Turn oven up to broil after crostini’s are through baking.

Add mozzarella slices on top of crostini and place under broiler for approximately 3 minutes until cheese is melted and bubbly.

Grill the seasonal vegetables by lightly tossing them with olive oil and season with salt and pepper.  Place the vegetables on the hot grill and cook for 5-10 minutes or until done- depending on the vegetable.  We sliced our squash in ½” strips for the grill.  If using asparagus, grill them whole and cut them after grilling.

Generously spoon some Mediterranean Olive Spread on the melted cheese, top with some grilled vegetables and enjoy!

*Chefs note: for some additional smoky, grilled flavor, these crostini’s would be wonderful grilled.  Instead of initially baking the crostini’s, place them on a hot grill for about 30 seconds-1 minute per side to get nice grill marks and char.  Substitute any of your favorite Mezzetta Sandwich Spreads for this recipe.
