ingredients
- 1-20 oz. package cheese tortellini from the refrigerated section of your grocer
- 1 jar Mezzetta® Mediterranean Olive Sandwich Spread
- 1 large tomato, diced
- ½ c. cooked corn kernels
- 10 leaves of basil, thinly sliced
- Salt and Pepper to taste
preparation
Cook tortellini according to package instructions. Save some of the pasta cooking liquid when draining pasta out.
In a large bowl, add the Mediterranean Olive Spread. When pasta is cooked, place the warm pasta on top of the sauce and mix to thoroughly coat. Add a small amount of pasta cooking liquid to the bowl if needed to thin out the Spread.
Mix in the diced tomato and corn kernels. Garnish with basil leaves. This appetizer or side dish can be served both hot or cold.
